I have been using einkorn wheat with my gluten sensitivities for 3 years and LOVE it. I use a grain mill and flour sifter attachment (different from normal hand sifters), to save money.
This Einkorn Recipe was AMAZING! The cake was gone so fast between my husband and I, that I am sitting here wishing I had some more as I sharing with you the recipe!
2 1/2 Cups Einkorn Berries Milled then SIFTED to total 250 grams – You can use all purpose einkorn instead.
1/2 cup better melted
1/4 cup oil (like avocado, sunflower, or safflower oil)
1/4 tsp salt
1 TBS Vanilla Extract
1 1/4 cup cane sugar
4 eggs
1 1/2 tsp Baking Powder ( I love THIS brand because it’s aluminum free)
4 TBS sour cream
1 cup Milk ( we use raw whole milk but any will do)
Your going to want two 9 inch round pans if you plan to make a double stacked cake like mine OR use a 9 x 13 inch cake pan. This recipe makes either one and you don’t need to double it. Oil them both well and add a thin coat of flour to prevent from sticking. Honestly it’s hard to keep them from sticking so don’t skip this step!
Preheat the oven to 350 degrees. Add all the ingredients except the flour (the butter, oil, vanilla, sugar, 4 eggs, salt, baking powder, sour cream, & milk) to the mixer of medium till it’s all mixed together. Next your going to add all the flour but stir by hand with a rubber spatula to prevent it from being over mixed.
Add the cake batter to each 9 inch pan or the 9 x 13 cake pan. Make sure it is 1/4th inch from the top for the 9 inch pans.
Put both pans or the one large pan into the oven for 19- 25 minutes. Mine went more like 20 minutes but yours may need less or more! Allow the cake pans to cool completely before removing from the pan and adding icing.
6 TBS unsalted better
8 oz cream cheese (softened)
1 tsp vanilla
1/4 tsp salt
4 cups of powdered sugar
Combine the cream cheese, butter, powdered sugar, vanilla, and salt to the mixer until completely mixed well.
Remove the cakes from the pans if making a double layered cake. Then add a layer to the top of the first layer of cake like the picture shown above. Then add the second layer on top of that. Cover the rest of the cake with icing.
Use Blueberries & Strawberries to decorate it into a flag. Enjoy!
