These are Whole Wheat Einkorn Sugar Cookies! I tried them sifted and they tasted the same. They are SO GOOD! Einkorn is not the same as other flours. Make sure you realize this won’t work the same for regular flour!
248 g (about 3 cups) Whole Wheat Einkorn Flour or Berries Milled
Add all the dry ingredients to a large bowl. Then add all wet ingredients to a medium bowl. Mix the wet ingredients slowly using a wooden spoon, into the dry ingredients. Now get out the parchment paper out so you can roll out the dough. I put one for the bottom and one for the top. Preheat oven to 375. Cut shapes with cookie cutters of choice. Add them to cookie sheets and bake them for 8 minutes.
Icing
2 1/2 cups Powdered sugar
1/4 cup shortening (or butter)
2-3 TBS Milk
I use my kitchen aid to mix this all together and apply colorings with it in a separate bowl. THIS is the brand of safe food colorings I use! They are amazing for sugar cookies. It is the best bang for your buck I have found.
