4 TBS sea salt
8 cups water
6-8 cups of onions (I used regular white onions) thinly sliced
Make the brine with water and salt.
Put the onions into a half-gallon fermentation jar and put the brine on top, leaving about an inch or an inch and a half from the top of the jar.
Put your fermentation weights on top and submerge the onions in the brine.
Cover with the airlock lid. To do this, put the airlock grommet on the lid. Fill the airlock with water to the fill line and recap it. Put the airlock lid tight to prevent air from entering it.
Culture at room temperature (60-70 degrees) until you reach the flavor you want. Generally, it takes 5 days roughly.
When the fermentation is done, eat them immediately or put them in cold storage.
