Peppers are great for cooking, and we go through them more in the summer. I have been looking for ways to preserve our summer harvest, so we don’t feel like we need to eat so many during the summer months to keep up with the garden production! This is easy preservation I like to do to help stock up on spices. Through the winter there are many times, I don’t have bell peppers on hand so dehydrated ones make it easy to just grab from my spice stock and use in recipes like sloppy joes.
Dehydrator peppers are a healthy and flavorful addition to any meal. They can be used to add color and nutrition to salads, rice dishes, tacos, and more. If you have peppers that are starting to shrivel or turn brown, dehydrating them is a great way to extend their shelf life.
Dehydrating is the best way to preserve your peppers. Peppers dehydrated in a dehydrator will last for years, and they are so easy to rehydrate when you need them! All you have to do is soak them in water for about 30 minutes and then they are ready to use. I dehydrate all different kinds of peppers, but my favorites to dehydrate are bell peppers, jalapeños, and habaneros.
We also dehydrate many other things in our home such as fruits, jerky, garlic, and so many others! The Excalibur Dehydrator is the best bang for your buck. You can do many things with it like fermenting yogurt.
There are many uses for dehydrator bell peppers. I like to dehydrate them and then grind them into a powder to use as a seasoning. You can also add them to soups, stews, casseroles, and more. They are a great way to add flavor and nutrition to your meals.
Be careful when dehydrating peppers! Peppers can be very irritating to your skin and eyes. Don’t touch your face, especially around your eyes after touching the peppers. If you do though, get a fatty oil such are coconut oil, avocado oil, or lard and apply with a paper towel right away to help the sting!
When in the process of dehydrating the peppers put them in a garage or well-vented room away from animals. The fumes can be strong in the air. Different types of peppers are stronger than others!
Slice the peppers thinly, around ⅛” thick. If they are too thick, they will take forever to dehydrate and if they are too thin they will burn easily.
Arrange the peppers on the dehydrator racks, making sure that they are not touching or overlapping.
After the peppers are dehydrated, store them in an airtight container in a cool, dark place. They will last for years if stored properly!
You will need peppers and a dehydrator. You can use the oven if needed too!

Dehydrate at 125 degrees Fahrenheit for around 12 – 24 hours, or until the peppers are completely dry and brittle. Store dehydrated bell peppers in an airtight container in a cool, dark place. They will last for years if stored properly!
